Caramelized Fried Banana (Vietnamese Style)




Note : di resep ini ga menggunakan telor, tapi saya gunakan telor untuk coating pisang sebelum ditaroh di breadcrumbs..lalu diamkan sejenak sebelum digoreng supaya rotinya menempel dengan baik...

Ingredients :

- Bananas
- Hazelnuts, toasted and ground (saya ga pake, tapi lain kali patut dicoba..)
- Fresh bread crumbs (beli jadi yang merk MAMA SUKA...great)
- Vegetable oil, for deep frying

For The Sauce :

- Butter
- Soft brown sugar (pake gula jawa....)
- Water
- Coconut milk

Method :

- Peel the bananas and cut them in half lengthways.
- Mix together the hazelnuts and breadcrumbs in a dish and coat the banana pieces well, pressing the crumbs on to them.
- Heat together all the sauce ingredients in a small heavy based saucepan, stirring all the time until you have a caramel sauce.
- Heat the oil in a deep-fryer or saucepan to 190oC (375oF) and fry the bananas in batches, for 2 minutes or until golden brown.
- Remove the bananas on to kitchen paper to drain.
- To serve, place the bananas on individual dishes and pour over the warm caramel sauce.
